When I was younger (much younger) my idea of a good “inuman” (drinking) session was a good cocktail on tap and awesome matching pulutan (bar chow). It seems that this is a constant with Filipinos – to have bar chow with their food – and it seems to be something that the international bar scene is picking up and something that the Gilarmi Lounge at Discovery Primea has beautifully restructured and presented.

The Gilarmi lounge is named after the former Gilarmi apartments that the establishment now stands on. GM David Pardo de Ayala tells his wonderful story of “coming home” to the Gilarmi: He lived in the Gilarmi apartments when he first came to the country and now, he is the GM of the Gilarmi Lounge and Discovery Primea! Kizmet, if you ask me. 🙂

Somehow, it’s a “coming home” of sorts for me as well. Tasting the upgraded Classic Cocktails of Lee Watson and Modern Filipino Bar Chow from Luis Chikiamco was like a trip back in my college days but this time, it’s more sophisticated and polished. The only way I can describe it is that it’s “age appropriate” inuman and pulutan.

There are several bar chows that Chef Luis Chikiamco created  that were kits, such as the Filipino ceviche but I personally highly recommend the Sisig sa Riles matched with the Rivera Fizz. Of course, you’re free to  mix and match according to your taste.

For a limited time only, The Gilarmi Lounge at Discovery Primea will offer the “The Gilarmi Sunset” promotion from 5PM to 8PM, Mondays through Sundays. For only Php 595++, guests will be able to enjoy two glasses of Stella Artois Draft Beer and their choice of Modern Filipino bar chow, among Grilled Chicken Wings Inasal, Smoked Bangus Spring Rolls, “Sisig sa Riles” with Chili-Soy, Calamansi and Soft-Poached Egg, and Grilled Tuna Brochettes with Crispy Chili Garlic.
